Potato Balls, page 66

Wash and peel potatoes, put them in water let them remain an hour before cooking; boil until thorouhgly {sic} cooked, take out and add salt, butter, pepper, mash fine, make in balls and fry in butter or lard. Arrange on a dish, garnish with a wreath of celery.


Snow Pyramid, page 208

Take hot rice that has been thoroughly cooked, add sugar and butter to taste; butter a pyramid mould, put in a layer of rice and jelly, alternately, until the mould is full let it remain until cold, turn out in small dishes, "frost" and serve.
