The following recipe is both good and economical, as it needs no eggs: One and a half cups of Orleans molasses, 1/2 cup of brown sugar, 1/2 cup of butter, or drippings, 1/2 cup of sweet milk, 1 teaspoonful of soda, 1 teaspoonful of allspice, 1/2 teaspoonful of ginger, 3 cups of sifted flour. Beat the molasses, sugar and butter together, add the spice and ginger, then the milk in which you have dissolved the soda, and lastly the flour.

Sour Milk Biscuit, page 12

Rub into a quart of sifted flour one level teaspoonful of soda, and one teaspoonful of salt, then butter or lard the size of an egg. Stir into this a pint of sour milk, knead it up quickly, roll out nearly half an inch thick and cut out with a biscuit cutter. Bake immediately in a quick oven.


How to Fry Chicken, page 50

After it is cut up salt and pepper to taste and roll in flour. Have the frying pan ready with either butter or lard hot. Fry the chicken nice and brown. When brown on both sides add some water, put on a lid and stew until nicely done.
