Cheese Straws, page 23

Five table-spoonfuls grated cheese, 5 table-spoonfuls sifted flour, 3 tablespoonfuls butter, 1/2 teaspoonful baking powder, 1 small pinch salt, 1 small pinch red pepper; mix with cold water, roll out the thickness of pie crust, and bake a light brown in a quick oven.


Beef Loaf, page 33

Three pounds of raw beef chopped very fine, 3 eggs, 3 table-spoonfuls cream or milk, butter the size of an egg; mix the eggs and cream; mix with the beef 4 or 5 crackers rolled fine, 1 teaspoonful black pepper, 1 large table-spoonful salt; mix all well together and form into a loaf. Bake 2 1/2 hours, basting with butter and water while baking. Serve cut in thin slices.


White Cake, page 156

Whites of eight eggs, beaten to a froth, 2 cups sugar, 1/2 cup butter, 3/4 cup of milk, 3 cups flour, 2 teaspoonfuls baking powder.


Quick Cake, page 164

One and a half cups of sugar, 1/2 cup butter, 1 cup milk, 3 cups flour, 2 teaspoonfuls of baking powder.
