Baking Powder, page 23

Two pounds cream tartar, 1 pound soda, 1 ounce tartaric acid, 2 pounds flour. Sift seven times. Will make 1/2 gallon or more of baking powder.


Layer Cake, page 188

One and a half cups of white sugar, 1/2 cup of butter, 1 cup of sweet milk, 3 cups of flour, 1 teaspoonful of soda, 2 of cream tartar, the whites of 5 eggs, beaten to a stiff froth; the butter and sugar previously beaten to a cream. Bake in six cakes.


Chow Chow, page 214

Three large cabbage, 1 peck green tomatoes, 1 peck ripe tomatoes, green peppers to suit taste, black pepper to suit taste, 1 teaspoonful cloves, 1 teaspoonful spice, cinnamon, salt to suit taste, 50 cents worth brown sugar, 1 1/2 gallons apple vinegar; drain ripe and green tomatoes over night, pour all together and cook slowly half a day, then seal up in stone jars.
