Spiced Peaches, page 224

Two pints of sugar, 1 pint of vinegar, 1 peck of peaches, stick cinnamon or nutmeg to suit taste, boil sugar and vinegar together, drop in fruit in small quantities, boil 1 minute; remove fruit to jar, add more fruit until all is cooked; pour over liquid and seal.


Quince Honey, page 250

Three pounds of granulated sugar put in kettle with 1 pint of water, let come to a boiling point; add 3 large quinces grated. Boil 20 minutes.
