Hen with Dressing, page 46

Having dressed and salted the hen over night, put on and cook until tender. Prepare a dressing as follows: Take stale bread, soak it with the liquid and season with sage, pepper, salt and butter. Place the hen in baking pan, stuff, and bake a nice brown.


Hard Time Custard, page 207

Stir two table-spoonfuls of flour to a smooth paste in a little warm water and stir into a pint of boiling water, having the paste as smooth and free from lumps as possible, the same as you would make starch. Beat two eggs very light sweeten to suit the taste and flavor with any desired spice.


To Can Grapes, page 234

Take ripe grapes, heat them, and run them through the colander. Can same as other fruit. When opened in the winter you can make jelly out of the wine and pies out of the pulp.
